Zucchini Hummus

This is packed with nutrients and a good way to get some veggies into the pickiest eater. You can make this one with any mildly flavored vegetable. Cauliflower, zucchini, fresh fava beans all work well.

  • 2 zucchini- chopped
  • 3/4 cup raw tahini paste
  • 1⁄2 cup fresh lemon juice
  • 1/3 cup cold pressed olive oil
  • 2 cloves garlic, minced
  • 2 tsp sea salt
  • Pinch freshly ground black pepper

In a high speed blender puree the garlic, salt and lemon juice until completely pureed. Add the rest of the ingredients and puree until creamy.
